What’s for Dinner? Herbed Chicken Nuggets

YUMMY!  I’m making some comfort food tonight :)  Going to try out this recipe for herbed chicken nuggets and since Steve is working nights, I’ll make enough that I can freeze them to cook later too!

Herbed Chicken Nuggets

You’ll need:

  • 4 skinless, boneless chicken breasts
  • 2 eggs, beaten
  • 1 tbsp water
  • 1 tsp chopped fresh parsley
  • 1/2 tsp dried thyme
  • 1 pinch crushed red pepper flakes (I’m not going to use these since I don’t have any!)
  • 1/2 cup dried bread crumbs, seasoned
  • 1/2 cup wheat germ
  • 1 tsp dried basil
  • 1 tsp ground black pepper
  • 1 tbsp vegetable oil

Preheat oven to 425F / 220C.  Spray a baking sheet with non-stick cooking spray.  Trim any fat from chicken and cut into 1 inch cubes.  In a bowl, beat the eggs with the water and add the chicken.  Combine the parsley, thyme, red pepper, bread crumbs, wheat germ, basil and ground pepper.  Stir in the oil with a fork and mix well to distribute evenly.  Pour seasoning mixture into a resealable bag and the chicken pieces to coat.

Place coated chicken on the prepared baking sheet and bake at 425F for 10 minutes.  Turn the pieces over and cook for an additional 5 minutes.

What’s for Dinner? Four Cheese Macaroni Casserole

This ended up being a yummy, cheesy twist on an old favorite that my mom used to make for us all the time!  It’s super easy to make, doesn’t require a whole lot of ingredients and is FAST!

Four Cheese Macaroni Casserole

You’ll need:

  • 3 cups uncooked macaroni
  • 1 (28oz) can of whole peeled tomatoes, drained and chopped (I used diced tomatoes, drained… I mean, why go through the effort of chopping them myself?! haha)
  • 1 tsp Italian seasoning
  • 1 tsp basil
  • 1 tsp oregano
  • salt and pepper to taste
  • 1 1/2 cups grated cheddar cheese
  • 1 1/2 cups grated mozarella cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 1/4 cup crumbled feta cheese

Preheat oven to 350F / 175C.

Bring a large pot of lightly salted water to a boil over high heat.  Add macaroni and cook until al dente, about 8-10 minutes.  Drain and pour hot pasta into a casserole dish.

Meanwhile, in a large bowl, stir together tomatoes, Italian seasoning, oregano, basil, salt and pepper.

Stir into the hot pasta 1 cup of cheddar cheese, 1 cup of mozzarella cheese and 1/2 cup Parmesan cheese.  Continue to stir until the cheeses have melted.  Then, stir in tomato and herb mixture.  Sprinkle the remaining cheeses (including the feta) over the top of the casserole.

Bake in preheated oven for 15-25 minutes.
